Baked Croaker With Cracked Peanuts
Croaker
Butter or vegetable oil
Seasoned bread crumbs
Pecans or Walnuts (chopped finely)
Salt & pepper
Here is one way to prepare the Croaker. Preheat oven to 500 degrees. Place into the oven a baking
pan large enough for the amount of fish you are going to bake (Croaker are most often pan size fish).
The Crocker should be cleaned with bones left in. Take fish and coat both sides with melted butter or
vegetable oil, roll oiled fish in a mixture of seasoned bread crumbs, nuts, and sprinkle with salt and
pepper. Place fish onto your pre-heated baking dish and put back into oven and cook at the high
temperature for 10 minutes.
