Cheddar Crusted Fillet Of Flounder

2 cups reduced fat cheese snack crackers -- finely crushed
1 1/4 ounces taco seasoning mix
1/2 cup cheddar cheese, lowfat -- shredded
1 egg white
1 1/2 pounds flounder fillets
vegetable cooking spray
Preheat oven to 450 degrees. Line a baking sheet with heavy aluminum foil and spray with vegetable
cooking spray.
Place cracker crumbs in a shallow dish. Add cheese and mix well.
Put egg white in a shallow dish and beat slightly.
Sprinkle both sides of fish with taco seasoning mix. Dip fillets in egg white and then into the cracker
crumbs to coat completely.
Bake for 10 to 12 minutes, or until the coating is crisp and the fish is cooked through.
