Flounder Al La Louie


Serves Two - Cooking time 20 minutes

Ingredients:

1 Pound of flounder fillets.
1 Ounce of Butter.
1 Ounce of flower.
2 Cloves of garlic thinly sliced.
3 Tablespoons of olive oil.
1 Ounce of lemon juice.
1 Fresh lemon.
½ Cup of white wine.
Salt & pepper.
Parsley.
Preparation:

Cook over medium low heat.

1. In a saucepan melt the butter.
2. Add the flour cook till it starts to brown approx. 2 minutes.
3. Add the oil until hot.
4. Add garlic.
5. Salt and pepper fish to taste.
6. Place fish in pan cook on one side, 2 to 3 minutes.
7. Pour the lemon juice over the fish.
8. Flip the fish over, cook additional 1 minute.
9. Add the wine.
10. Cook until fish flakes under fork.
11. Dish the fish and pour juice over fish.
12. Garnish with parsley and lemon slices.

Goes well over a bed of brown rice.
