Grilled Caribbean Style Mahi
4 steaks
3 T. olive oil
1/4 C. chopped shallots
1/3 C. chopped green bell pepper
1/3 C. chopped red bell pepper
3/4 C. chunky salsa
1/4 C. apricot preserves
1 1/2 T. chopped cilantro
3/4 t. garlic salt
seasoning salt
In a large skillet, heat 1 T. olive oil over a medium heat until hot. Add shallots and bell pepper and sauté 3
minutes. Add salsa, apricot preserves, cilantro, and garlic salt. Blend well and cook 2 minutes. Brush fish steaks
with olive oil and sprinkle with seasoning salt. Grill or broil 5 minutes on each side or until fish starts to flake.
Spoon juice over grilled fish before serving.
