Smoked Sea Bass
- Sea bass fillets
-2 lemons
-i Cup of olive or Canola oil
-1 pan of your favorite smoke chips(an old
bread pan is perfect)
-Grilling rack
-Marinate Sea bass fillets in oil and the juice
from one lemon for 1 hour
-Place pan of smoke chips directly on BBQ
burner and start the Bbq
-When the chips start to smoke turn your Bbq
to its lowest temperature setting (probably best
to turn off all but one burner)
-Place fish in a grilling pan or a BBQ pizza pan
(This is simply a pizza pan with holes drilled
throughout, they can be purchased at your
favorite Bbq store or you can make your own)
-The purpose of the pan is to prevent a flaky
fish fillet from falling through the grill
-Place the pan with the fish on the highest rack
and close lid and allow the smoke to do its job
- the fish will be done in 30-45 mins depending
on temperature and thickness!!!
