Baked Weakfish With Herb Sauce
Serves 4
Ingredients
1 1/2 pounds
Weakfish fillets, cut into
serving size portions
2 tbsp. Yogurt, low fat
3 tbsp. Mayonnaise
1/4 tsp. Marjoram
1/4 tsp. Thyme
1/4 tsp. Onion powder
1/4 tsp. Rosemary
1/4 tsp. Tarragon
3 tbsp. Pimiento, chopped
1/3 cup Vermouth, dry (or Dry white
wine)
Salt, to taste
Pepper, freshly ground, to
taste
Rinse weakfish fillets or portions and
pat dry with a paper towel. Place fillets
or portions in a baking dish coated
with vegetable oil cooking spray.
Thoroughly mix low fat yogurt,
mayonnaise, marjoram, thyme, onion
powder, rosemary, tarragon and
pimientos. Spread mixture evenly on
top of fillets. Pour vermouth or dry
white wine over fish. Bake uncovered
at 350°F for 25 to 30 minutes or until
fish flakes easily with a fork.
