Honey Pecan Crusted Weakfish
1 lb. of weakfish fillet
3/4 cup of toasted pecans, crushed
1/4 cup of blended oil
Tbs. of honey
For the sauce:
juice of 2 oranges
zest of 1 orange
Tbs. of whole unsalted butter
1 Tsp. of Wondra flour
1/2 cup of honey
1 Tbs. of chopped shallots
Heat your oil in a non-stick sauté pan. Lightly rub the weakfish with honey and gently coat with the
crushed pecans. Place fillets in hot oil and brown the nuts on both sides for Apr. 2 minutes.
Remove the fish. For the sauce: Discard the oil from the pan, add butter, shallots, and zest and
cook for one minute. Add flour and cook one minute more. Add the honey and the orange juice
and reduce to desired consistency. Strain through a fine sieve. Note: Do not finish cooking the fish
in the sauce it will over power the taste of the fish, Finish the fish in the oven at 350 degrees and that
will remove any excess oil also. Serve the fish over a generous amount of sauce.
