Shrimp and Fish Kabobs
Start with fish such as Swordfish, Tuna, Salmon, cut into cubes. Use
around 2 pounds total.
18 to 20 Large Shrimp, peeled and deveined
12 Large mushrooms, stems removed
12 Zucchini slices, 1 1/4 inches thick
1/2 cup butter or margarine
1 teaspoon of salt
1/4 teaspoon of pepper
Arrange your fish, shrimp, mushrooms, and zucchini on 6 skewers.
You should pre-soak the wooden skewers for 30 minutes.
Melt butter in a small saucepan. Add salt and pepper. Stir. Place
skewers on medium-hot grill .Brush with butter often until fish is
browned and cooked, about 6 to 8 minutes
